Barrel Aged

Bourbon Barrel Aged I Must Break You- Russian Imperial Stout- 11% ABV- 12 oz $8.5, 5 oz $4.5

Our version of an old school Russian Imperial Stout that is dryer and more roasty than most Imperial Stouts today. Brewed with roasted malts, crystal malts, flaked oats, and brown sugar, for a complex blend of coffee, dark chocolate, toffee, and dark fruits that finishes smooth without being sweet. This version was aged for a year in Knob Creek Bourbon barrels for additional complexity and notes of Bourbon, vanilla, stone fruits, oak, and spice.

Bourbon Barrel Aged I Must Break You- Chocolate/Vanilla RIS- 11% ABV- 12 oz $8.5, 5 oz $4.5

Bourbon BA I Must Break You with a blend of Ecuadorian, Dominican, Ugandan, and Philippines Cocoa nibs, and real Madagascar Vanilla beans added after barrel aging.

IPA/Hoppy

Gulf Coast United- American Pale Ale- 5.5%ABV, 40 IBU- 16 oz $7, 5 oz $3

Organized by Hop District Community Brewing Company, several breweries have come together to brew this beer. A portion of the proceeds will go to the Florida Disaster Fund. Our version is an easy drinking yet flavorful Pale Ale brewed with Citra and Idaho 7 hops for a bright, citrusy hop character. A bit of Munich and Crystal malts add a toasty malt character and a hint of sweetness to balance the hops.

Limey Bastard- English Pale Ale- 5.4% ABV, 38 IBU- 16 oz $6, 5 oz $2.5

Also known as ESB or Bitter, English Pale Ales are much more balanced with a less assertive hop character than American Pale Ales. Our version uses English Maris Otter Pale malt, Amber malt and a bit of Crystal malt for a bready, biscuty malt character. English hops give the beer a floral/earthy hop character to balance the malt.

Roundabout- Hybrid Pale Ale- 5.4% ABV, 20 IBU- 16 oz $7, 5 oz $3

Brewed to highlight the best aspects (in our opinion) of Traditional and New England Style IPA/Pale Ales. This beer has low bitterness an a big fruit forward “juicy” hop character like a New England IPA. It also has the a little bit of piney hop character and is drier, more drinkable, and refreshing like a traditional IPA.

Crank It Hop- Manderina/Huell Melon/Blanc Hopped IPA- 6% ABV, 50 IBU- 16 oz $7, 5 oz $3

Each batch of Crank It Hop features different hops. This batch features 3 newer German Hops (Manderina Bavaria, Huell Melon, and Halertau Blanc) that have a very fruit forward character (citrus, melon, strawberry, pineapple, grape) more similar to American and Southern Hemisphere varieties than typical German varieties.

Crank It Hype- New England Style IPA- 7% ABV, 25 IBU- 16 oz $7.5, 5 oz $3.5

Fuller in body and less bitter than a traditional IPA but our version stops short of being sweet like a lot of examples, keeping the beer more drinkable. 4+ pounds per barrel of hops are used, all of which are added in the whirlpool and as dry hops. This extracts less bitterness from the hops, and gives the beer a “juicy” hop character and the trademark “hazy” appearance.

Tropical Hype- Pineapple/Peach New England IPA- 8.5% ABV, 25 IBU- 12 oz $8, 5 oz $4

Crank It Hype, NEIPA, with real Pineapple and Peach juice added to the fermenter. By adding the fruit to the fermenter the simple sugars ferment, preventing the beer from becoming too sweet. This is not a “milk shake” IPA, there is no lactose, the fruit is meant to compliments the hops without overpowering them.

Prediction?…Pain!- Imperial IPA- 8.5% ABV, 85 IBU- 12 oz $7.5, 5 oz $3.5

More balanced than a lot of IIPAs with a focus more on flavor and aroma hops than bitterness. Hopped with Ekuanot, Simcoe and Mosaic. These hops create a complex blend of flavors including citrus, tropical fruit, berry, passion fruit, peach, and pine.

Dark Water- Imperial Black IPA- 9% ABV, 80 IBU- 12 oz $7.5, 5 oz $3.5

Brewed in collaboration with Dark Water Studios who provided artwork and inspiration. The color and soft coco character come from Midnight Wheat malt which is very dark but lacks the roasty “bite” of stouts and porters. We also use a bit of Munich malt for some toasty malt character and a little brown sugar for a hint of molasses. The beer is hopped with Mosaic and Citra hops for a pungent hop character with notes of grapefruit, berry, tangerine, melon, passion fruit, and pine.

Light

Brixie’s Lager- Premium Lager- 5.3% ABV, 13 IBU- 16 oz $6, 5 oz $2.5

Drink in the tradition of this bright golden lager brewed to honor the history of Brixie’s, the former home of our Brookfield location. Brewed with Pilsner malt, Special Aromatic malt, and a combination of traditional Saaz and El Dorado, a newer American hop, for a complex yet refreshing flavor and slightly dry finish.

Czech Your Head- Pilsner- 5.2% ABV, 29 IBU- 16 oz $6, 5 oz $2.5

Our take on a traditional Czech Pilsner is extremely well balanced with a clean, bready malt character from Pilsner and a bit of Vienna malt and just enough hop presence to give the beer a crisp, dry finish. Czech Saaz hops provide the floral, slightly spicy hop flavor and aroma.

Sundown Wit- Belgian Wit- 5.5% ABV, 10 IBU- 16 oz $6, 5 oz $2.5

Our take on a traditional Belgian Wit (White) Beer. Brewed with some flaked oats and wheat along with Pilsner and wheat malt to give the beer a light body along with a smooth, creamy mouth feel. We also add the traditional orange peel, coriander, and a bit of chamomile to boost the citrus character of the yeast.

Dark

Nobody’s Alt But Mine- Dusseldorf Style Altbier- 5.5% ABV, 31 IBU16 oz $6, 5 oz $2.5

Altbier is a dark, German ale traditionally brewed in Dusseldorf. It is fermented at cooler temperatures for a clean malt character similar to German lagers. It is malt forward with notes of toasted bread, toffee, and coco but has enough hop presence to give the beer a crisp finish without being sweet.

Dunkelschizer- Dunkelweizen- 6% ABV, 10 IBU- 16 oz $6, 5 oz $2.5

Dunkelweizen is a dark version of the classic German Hefeweizen. The same yeast is used giving the beer the banana and clove characteristics typical of German Wheat beers. The darker color comes from the use of Munich malt and a touch of crystal malt which gives the beer a toasted bread character with a bit of sweetness.

Udderly Black- Milk Stout- 5.3% ABV, 20 IBU- 16 oz $6, 5 oz $2.5

A blend of roasted malts give the beer its rich chocolate and coffee character. The body and sweetness are provided by crystal malts and the addition of Lactose (Milk Sugar) which is not fermented by beer yeast.

Savage Oak (Sour/Wild)

Chardonnay Barrel Aged Straw- Foeder/Barrel Brett Saison w/ Viognier Must- 6%- 11 oz $7.5, 5 oz $3.5

Fermented with Belgian Saison yeast and then aged for a year in an Oak Foeder with our custom blend of fruit forward Brettanomyces. The Saison yeast and Brett produce a strong fruitiness with notes of tropical fruits, citrus, cherry, berries, a mild earthy funk, and a slightly tart, dry finish. After Foeder aging, this version was aged for over a year in Chardonnay barrels with Viognier wine must (juice) added. Viognier is a French, white wine grape similar to Chardonnay with stone fruit, herbal, and floral notes. The extra aging adds complexity with notes of white wine, oak and a more noticeable tartness.

Peach Gold- Lambic Inspired Sour Golden Ale- 7.5% ABV- 11 oz $8, 5 oz $4

Gold is inspired by the traditional Lambics of Belgium. Brewed with wheat and flaked oats for a light malt character but still a bit of body. The beer is then aged for over a year in an oak Foeder with our custom blend of wild yeast and bacteria. The result is a complex beer with a pleasant sourness, notes of citrus, tropical, and stone fruits, and a mild, earthy funk. After Foeder aging, this version has an additional aging in stainless with real, Peach juice. Adding the juice to the fermenter allows the simple sugars to ferment, adding complexity and preventing the beer from becoming too sweet.

Watermelon Blanc- Foeder Aged Brett Berliner Weisse- 4.5% ABV- 11 oz $7, 5 oz $3.5

Our take on the classic German style sour wheat beer is co-fermented with Lactobacillus bacteria and a blend of fruit forward Brettanomyces and then aged in an Oak Foeder. The result is a more complex version of the style with a smooth but noticeable sourness and notes of tropical and stone fruit, citrus, oak, and a mild funk. After Foeder aging, this version has an additional aging in stainless with real Watermelon juice. Adding the juice to the fermenter allows the simple sugars to ferment, preventing the beer from becoming too sweet.

On Premise Bottles

In addition to the beers on tap, all of the Savage Oak bottles in our to-go cooler are available for on site consumption for a $2 service fee. Bring the bottle to the bar and your bartender will open it for you. Open bottles must remain behind the bar.
