Barrel Aged

Bourbon Barrel Aged Ragnarok- Baltic Porter- 10% ABV- 12 oz $8.5, 5 oz $4.5

Ragnarok, Baltic Porter, aged for a year in Oppidan Spirits Solera Bourbon barrels. The barrel aging adds complexity and notes of bourbon, oak, vanilla and spice.

Bourbon Barrel Aged Ragnarok with real Vanilla Beans and a hint of Sea Salt added after barrel aging.


Limey Bastard- English Pale Ale- 5.4% ABV, 38 IBU- 16 oz $6, 5 oz $2.5

Also known as ESB or Bitter, English Pale Ales are much more balanced with a less assertive hop character than American Pale Ales. Our version uses English Maris Otter Pale malt, Amber malt and a bit of Crystal malt for a bready, biscuty malt character. English hops give the beer a floral/earthy hop character to balance the malt.

Crank It Hop- Simcoe/Ekuanot Hopped IPA- 6% ABV, 50 IBU- 16 oz $7, 5 oz $3

Each batch of Crank It Hop features different hops. This batch features one of our favorite combinations. Simcoe is a classic American IPA hop with notes of passion fruit, apricot, and a classic piney, resinous finish. Ekuanot is a newer hop with notes of citrus, tropical fruits, melon, berry, and herbs.

Crank It Dank- West Coast Style IPA- 7% ABV, 60 IBU- 16 oz $7, 5 oz $3

West Coast IPAs are typically brewed to showcase hops with very little malt character. Our version is brewed with a very simple malt bill of Pale and Pilsner malt and a bit of sugar to dry the beer out. It is aggressively hopped with Ekuanot, Citra and Mosaic. These are newer hop varieties that are bred to have a strong, pungent aroma and flavor often described as “dank”.

Crank It Hype- New England Style IPA- 7% ABV, 25 IBU- 16 oz $7.5, 5 oz $3.5

Fuller in body and less bitter than a traditional IPA but our version stops short of being sweet like a lot of examples, keeping the beer more drinkable. 4+ pounds per barrel of hops are used, all of which are added in the whirlpool and as dry hops. This extracts less bitterness from the hops, and gives the beer a “juicy” hop character and the trademark “hazy” appearance.

Extra Hype- Strata/Mosaic/Azacca Double NEIPA- 8.5% ABV, 35 IBU- 12 oz $8, 5 oz $4

 This version of our New England Style IPA has Extra everything! It is stronger, with more flavor and body, and more hops! We use 5 lbs per barrel of hops in this one. This batch uses a blend of Strata, Mosaic, and Azacca hops for a complex, juicy, fruitiness with notes of citrus, berries, passion fruit, tropical fruits, and a hint of pine.

Prediction?…Pain!- Imperial IPA- 8.5% ABV, 85 IBU- 12 oz $7.5, 5 oz $3.5

More balanced than a lot of IIPAs with a focus more on flavor and aroma hops than bitterness. Hopped with Ekuanot, Simcoe and Mosaic. These hops create a complex blend of flavors including citrus, tropical fruit, berry, passion fruit, peach, and pine.

Imperial Pain!- Imperial Imperial IPA- 12% ABV, 100+ IBU- 6 oz $4

This version of Prediction?…Pain! Uses the same blend of malt and hops as regular Pain but almost double the amount. It is intense and strong but is surprisingly smooth for its strength, and isn’t sweet like a lot of IIIPAs.


Brixie’s Lager- Premium Lager- 5.3% ABV, 13 IBU- 16 oz $6, 5 oz $2.5

Drink in the tradition of this bright golden lager brewed to honor the history of Brixie’s, the former home of our Brookfield location. Brewed with Pilsner malt, Special Aromatic malt, and a combination of traditional Saaz and El Dorado, a newer American hop, for a complex yet refreshing flavor and slightly dry finish.

Fall Down Wit- Cherry Belgian Wit- 6% ABV, 10 IBU- 16 oz $6, 5 oz $2.5

Belgian Witbier (White Ale) with a bit of a twist. Brewed with the traditional wheat, oats, orange peel, and coriander, but we also added tart Cherry juice to the fermenter giving the beer a complimentary cherry flavor and a refreshing, tart finish.


Augustas Gloompah- Chocolate/Vanilla/Coffee Milk Stout- 5.5% ABV, 30 IBU- 16 oz $7, 5 oz $3

This is home brewer Chris Schmelzer’s recipe that won best of show at this year’s Brixtoberfest home brew competition put on by the Brixie’s Brewers home brew club. This milk stout is brewed with lots of real Cocoa nibs, Vanilla beans, and coffee from our friends at Ten Drops Coffee Labs.

Ragnarok- Baltic Porter- 9% ABV, 18 IBU- 12 oz $7.5, 5 oz $3.5

Baltic Porter is a bit different than a traditional Porter, it is stronger and less roasty with more rich, toasty, malt flavor. It is also a lager which allows the Munich, Caramunich and roast malts to take the forefront and gives the beer a clean, smooth finish. Named after the Baltic term for the Apocalypse.

Sugar Shack- Maple Brown Ale- 7% ABV, 18 IBU- 16 oz $7, 5 oz $3

Brewed with real Vermont maple syrup for a nice maple note that balances well with the brown ale base beer. Munich, Crystal, and Oat malts provide some sweetness and a toasty flavor to support the maple, we also add a bit of lactose and vanilla to accentuate the maple, no maple “flavoring” or extract was used.

Admiral Ackbeer- It’s A Trapp-ist! Style Dubbel- 7% ABV, 16 IBU- 16 oz $7, 5 oz $3

A complex, yet easy drinking, Belgian Ale. Belgian yeast provides a fruitiness with notes of citrus, cherry and stone fruits and a bit of spice on the finish. A bit of dark crystal malt and dark Belgian Candi Syrup give the beer its rich, ruby color and provide notes of toffee, raisin and plumb.

Plaid Piper- Scottish Ale- 5.5% ABV, 14 IBU- 16 oz $6, 5 oz $2.5

A malt forward beer that is rich and slightly sweet but still very drinkable. It is brewed with Scottish Golden Promise Malt, a little bit of crystal malt, and a touch of chocolate malt to add a hint of roast. It also uses a concentrated boil at the beginning of the wort collection to concentrate the malt flavors and create a toffee/caramel character.

Udderly Black- Milk Stout- 5.3% ABV, 20 IBU- 16 oz $6, 5 oz $2.5

A blend of roasted malts give the beer its rich chocolate and coffee character. The body and sweetness are provided by crystal malts and the addition of Lactose (Milk Sugar) which is not fermented by beer yeast.

Savage Oak (Sour/Wild)

Ruby- Foeder Aged Flanders Style Red Ale- 8% ABV- 11 oz $7, 5 oz $3.5

Brewed with Munich and CaraMunich malts for some sweetness and a bready, toasted malt character. The beer is then aged for over a year in an oak Foeder with our custom blend of wild yeast and bacteria for a complex blend of flavors including pie cherry, stone fruits, berries, oak and a mild, earthy funk at the end.

Straw- Foeder Aged Brett Saison- 6% ABV, 23 IBU- 11 oz $6, 5 oz $3

Fermented with Belgian Saison yeast and then aged for a year in an Oak Foeder with our custom blend of fruit forward Brettanomyces. The Saison yeast and Brett produce a strong fruitiness with notes of tropical fruits (pineapple, mango), citrus, cherry, berries, a mild earthy funk, and a slightly tart, dry finish.

On Premise Bottles

In addition to the beers on tap, all of the Savage Oak bottles in our to-go cooler are available for on site consumption for a $2 service fee. Bring the bottle to the bar and your bartender will open it for you. Open bottles must remain behind the bar.
