2024 Quiet Giant Variants

Quiet Giant- 2 Year Aged- Bourbon Barrel Aged Imperial Stout- 14% ABV- 6 oz $6

Brewed once a year to celebrate our Anniversary, this is the biggest beer we make. This mammoth Stout is brewed with 3 types of roasted malt, 2 types of Caramel malt, Oats, and Brown Sugar for a rich and complex sipper. All variations are then aged in Bourbon barrels for a minimum of a year for additional complexity and notes of Bourbon, dark fruits, vanilla, oak, and baking spices. This version was aged for a full 2 years in Heaven Hill Bourbon barrels.

Quiet Giant- 10th Anniversary Select- Double Bourbon Barrel Aged Imperial Stout- 15% ABV- 6 oz $6

Aged for 18 months in Brown Forman Bourbon Barrels, then transferred to our hand selected Jeppson’s Bourbon Barrels for 9 months. We partnered with Jeppson’s distillery and the Chicago Whiskey Hunters to select 2 Bourbons. The barrels were used to age this beer and the Cask Strength Bourbon that came from the barrels is also available.

Quiet Giant- Coconut/Vanilla- Bourbon Barrel Aged Imperial Stout- 14% ABV- 6 oz $6

This version has an addition real toasted Coconut, and real Madagascar vanilla beans added after a year of aging in Four Roses Bourbon barrels.


Dave’s Pale Ale- Citra/Galaxy Pale Ale- 5.5% ABV, 40 IBU- 16 oz $7, 5 oz $3

Brewed using a “Hop Bursting” technique where all of the hops are added towards the end of the boil and as dry hops. This gives the beer a smoother bitterness with lots of hop aroma and flavor. The hops used are Citra and Australian Galaxy. The beer is named after home brewer Dave Fetty, who has won several awards with this recipe.

Roundabout- Hybrid Pale Ale- 5.4% ABV, 20 IBU- 16 oz $7, 5 oz $3

Brewed to highlight the best aspects (in our opinion) of Traditional and New England Style IPA/Pale Ales. This beer has low bitterness and a big fruit forward “juicy” hop character like a New England IPA. It also has a little bit of piney hop character and is drier, more drinkable, and refreshing like a traditional IPA.

Crank It Hop- El Dorado/Ekuanot Hopped IPA- 6% ABV, 50 IBU- 16 oz $7, 5 oz $3

Each batch of Crank It Hop features different hops. This batch features two newer hops. El Dorado is another big, fruit forward hop with notes of Tropical and Stone Fruits and hints of Watermelon, Berries, and Pear. Ekuanot is a newer hop with a unique fruity character with notes of lime, melon, berries, citrus fruits and a bit of earthiness on the finish.

Crank It Dank- West Coast Style IPA- 7% ABV, 60 IBU- 16 oz $7, 5 oz $3

West Coast IPAs are typically brewed to showcase hops with very little malt character. Our version is brewed with a very simple malt bill of Pale and Pilsner malt and a bit of sugar to dry the beer out. It is aggressively hopped with Ekuanot, Citra and Mosaic. These are newer hop varieties that are bred to have a strong, pungent aroma and flavor often described as “dank”.

Crank It Hype- New England Style IPA- 7% ABV, 25 IBU- 16 oz $7.5, 5 oz $3.5

Fuller in body and less bitter than a traditional IPA but our version stops short of being sweet like a lot of examples, keeping the beer more drinkable. 4+ pounds per barrel of hops are used, all of which are added in the whirlpool and as dry hops. This extracts less bitterness from the hops, and gives the beer a strong, “juicy” hop flavor.

Lil’ Pain!- Session IPA- 4.7% ABV, 35 IBU- 16 oz $7, 5 oz $3

This version of Prediction?…Pain! Is brewed with a lot less malt to be an easy drinking quencher. We used the same hop varieties, and the same amount of aroma and dry hops as regular Pain. Yes you read that right, this beer uses the same amount of flavor/aroma hops as our Imperial IPA resulting in a huge hop aroma and flavor that will keep you coming back for more.

Prediction?…Pain!- Imperial IPA- 8.5% ABV, 85 IBU- 12 oz $7.5, 5 oz $3.5

More balanced than a lot of IIPAs with a focus more on flavor and aroma hops than bitterness. Hopped with Ekuanot, Simcoe and Mosaic. These hops create a complex blend of flavors including citrus, tropical fruit, berry, passion fruit, peach, and pine.

Grapefruit Pain!- Imperial Grapefruit IPA- 8.5% ABV, 85 IBU- 12 oz $8, 5 oz $4

Prediction?…Pain!, Imperial IPA, with real Grapefruit juice added to the fermenter. Adding the fruit to the fermenter allows the yeast to ferment the simple sugars keeping the beer from becoming sweet. The grapefruit flavor compliments the hop character of the beer and adds a refreshing tartness on the finish.


Brookfield Lager- American Lager- 5% ABV, 8 IBU- 16 oz $6, 5 oz $2.5

This crisp, refreshing quencher is brewed with Noble hops, Pilsner malt and a good amount of corn for the perfect balance of flavor and drinkability. So good that you’ll feel like a local, even if you’re just passing through.

Buzz Lite Beer- Honey Golden Ale- 5.5% ABV, 13 IBU- 16 oz $6, 5 oz $2.5

Very drinkable and refreshing but still full flavored. This beer is brewed with local Honey from Smith-Talbot Apiaries. The honey flavor and sweetness are accentuated by the addition of Honey Malt and Flaked Corn. *Gluten Reduced*

Sundown Wit- Belgian Wit- 5.5% ABV, 10 IBU- 16 oz $6, 5 oz $2.5

Our take on a traditional Belgian Wit (White) Beer. Brewed with some flaked oats and wheat along with Pilsner and wheat malt to give the beer a light body along with a smooth, creamy mouth feel. We also add the traditional orange peel, coriander, and a bit of chamomile to boost the citrus character of the yeast.

Starkerschizer- Golden Weizenbock- 7.8% ABV, 12 IBU- 16 oz $7, 5 oz $3

Weizenbock is the strongest and most flavorful of the German Wheat beers. It is brewed with the traditional Weizen yeast for the classic banana/clove character expected from German Wheat beers. Ours is a pale version of the style brewed with Pilsner, Wheat and Munich malts for a malt forward, flavorful beer that still stays extremely drinkable.


Udderly Black- Milk Stout- 5.3% ABV, 20 IBU- 16 oz $6, 5 oz $2.5

A blend of roasted malts give the beer its rich chocolate and coffee character. The body and sweetness are provided by crystal malts and the addition of Lactose (Milk Sugar) which is not fermented by beer yeast.

Roil Red- Hoppy Red Rye- 6% ABV, 60 IBU- 16 oz $6, 5 oz $2.5

Brewed with a portion of malted rye and crystal rye that gives the beer a hint of spice and a dryer finish. The color and sweetness comes from Munich malt, and crystal malts. The hops used are Simcoe and Mosaic which add notes of citrus, tropical fruits, and pine.

Peach Blanc- Foeder Aged Brett Berliner Weisse- 4.5% ABV- 11 oz $7, 5 oz $3.5

Our take on the classic German style sour wheat beer is co-fermented with Lactobacillus bacteria and a blend of fruit forward Brettanomyces and then aged in an Oak Foeder. The result is a more complex version of the style with a smooth but noticeable sourness and notes of tropical and stone fruit, citrus, oak, and a mild funk. After Foeder aging, this version has an additional aging in stainless with real Peach juice. Adding the juice to the fermenter allows the simple sugars to ferment, preventing the beer from becoming too sweet.

Cherry Ruby- Foeder Aged Flanders Red- 8% ABV- 11 oz $8, 5 oz $4

Brewed with Munich and CaraMunich malts for some sweetness and a bready, toasted malt character. The beer is then aged for over a year in an oak Foeder with our custom blend of wild yeast and bacteria for a complex blend of flavors including pie cherry, stone fruits, berries, oak and a mild, earthy funk at the end. After Foeder aging, this version has an additional aging in stainless with real, tart Cherry juice. Adding the juice to the fermenter allows the sugars to ferment, preventing the beer from becoming too sweet.

On Premise Bottles

In addition to the beers on tap, all of the Savage Oak bottles in our to-go cooler are available for on site consumption for a $2 service fee. Bring the bottle to the bar and your bartender will pour it for you. Open bottles must remain behind the bar.

Jeppson’s Single Barrel Cask Strength Bourbon 1 oz $8, 1.5 oz $12, 2 oz $15, 750ml bottle $50

Hand selected, in partnership with the Chicagoland Whiskey Hunters from the Jeppson’s distillery. Our “Tenth Anniversary Select” variant of Quiet Giant was aged in these same bourbon barrels that the Jeppson’s bourbon was aged in.

-Barrel 101- 126.1 proof- Distilled in Kentucky- Tasting notes: Lots of caramel, vanilla, and butterscotch. Oak up front with a sweet honey finish. A touch of black pepper makes this a complex sipper.
-Barrel 102- 128.3 proof- Distilled in Kentucky- Tasting notes: Full bodied with layered notes of baking and rye spice character. Dubbed “Snickerdoodle” by the IOB crew.
