Quiet Giant- 2 Year- Bourbon Barrel Aged Imperial Stout- 14% ABV- 6 oz $6
Brewed once a year to celebrate our Anniversary, the Saturday after Memorial Day, this is the biggest beer we make. The beer is barrel aged for a minimum of a year and we do several variations each year. This version was aged for a full 2 years in Blanton’s and Four Roses Bourbon barrels.
Quiet Giant- Double Barrel- Bourbon/Cognac Barrel Aged Imperial Stout- 15% ABV- 6 oz $6
Aged for 9 months in Bourbon Barrels, then transferred to Cognac barrels for an additional 3 months.
Quiet Giant-Coffee/Vanilla- Bourbon Barrel Aged Imperial Stout- 14% ABV- 6 oz $6
This version has an addition of Ten Drops Ethiopian Yiracheffe Coffee and real Madagascar vanilla beans added after aging.
Quiet Giant- Chocolate/Pecan- Bourbon Barrel Aged Imperial Stout- 14% ABV- 6 oz $6
This version has an infusion of real, toasted Pecans and a blend of Ecuadorian, Ghana, and Ugandan Cocoa nibs after aging.
Quiet Giant- Mixed Berry- Rye Whiskey Barrel Aged Imperial Stout- 14% ABV- 6 oz $6
Aged in Willet Rye Whiskey barrels with real Raspberry and Blackberry juice. Adding the juice to the barrels allows the sugars to ferment, preventing the beer from becoming too sweet.
Crank It Hop- Simcoe/Ekuanot Hopped IPA- 6% ABV, 50 IBU- 16 oz $7, 5 oz $3
Each batch of Crank It Hop features different hops. This batch features one of our favorite combinations. Simcoe is a classic American hop with a complex blend of citrus, stone fruit, and pine. Ekuanot is a newer hop with intense tropical and citrus fruit character and notes of melon, berry, and a bit of pine.
Crank It Hype- New England Style IPA- 7% ABV, 25 IBU- 16 oz $7.5, 5 oz $3.5
Fuller in body and less bitter than a traditional IPA but our version stops short of being sweet like a lot of examples, keeping the beer more drinkable. 4+ pounds per barrel of hops are used, all of which are added in the whirlpool and as dry hops. This extracts less bitterness from the hops, and gives the beer a “juicy” hop character and the trademark “hazy” appearance.
Crank It Dank- West Coast Style IPA- 7% ABV, 60 IBU– 16 oz $7, 5 oz $3
West Coast IPAs are typically brewed to showcase hops with very little malt character. Our version is brewed with a very simple malt bill of Pale and Pilsner malt and a bit of sugar to dry the beer out. It is aggressively hopped with Ekuanot, Citra and Mosaic. These are newer hop varieties that are bred to have a strong, pungent aroma and flavor often described as “dank”.
Tropical Hype- Kiwi/Lime New England IPA- 8% ABV, 25 IBU- 12 oz $8, 5 oz $4
Crank It Hype, NEIPA, with real Kiwi and Key Lime juice and added to the fermenter. By adding the fruit to the fermenter the simple sugars ferment, preventing the beer from becoming too sweet. This is not a “milk shake” IPA, there is no lactose, the fruit is meant to compliments the hops without overpowering them.

More balanced than a lot of IIPAs with a focus more on flavor and aroma hops than bitterness. Hopped with Ekuanot, Simcoe and Mosaic. These hops create a complex blend of flavors including citrus, tropical fruit, berry, passion fruit, peach, and pine.
Brixie’s Lager- Premium Lager- 5.3% ABV, 13 IBU- 16 oz $6, 5 oz $2.5
Drink in the tradition of this bright golden lager brewed to honor the history of Brixie’s, the former home of our Brookfield location. Brewed with Pilsner malt, Special Aromatic malt, and a combination of traditional Saaz and El Dorado a newer American hop, for a complex yet, refreshing flavor and slightly dry finish.
Czech Your Head- Pilsner- 5.2% ABV, 29 IBU- 16 oz $6, 5 oz $2.5
Our take on a traditional Czech Pilsner is extremely well balanced with a clean, bready malt character from Pilsner and a bit of Vienna malt and just enough hop presence to give the beer a crisp, dry finish. Czech Saaz hops provide the floral, slightly spicy hop flavor and aroma.
Pink Lemonade Pils- Strawberry/Lemon Pilsner- 5.2% ABV, 29 IBU- 16 oz $7, 5 oz $3
Czech Your Head, Pilsner, with real Lemon (juice and zest) and Strawberries added. 1 keg only
Blurry Blond- Belgian Blond Ale- 6% ABV, 14 IBU- 16 oz $6, 5 oz $2.5
Light and drinkable Belgian style ale brewed with pilsner and a bit of wheat malt. The fruitiness and hint of spice is provided by the Belgian yeast.
Haulin’ Oats- Oatmeal Stout- 5.6% ABV, 17 IBU- 16 oz $6, 5 oz $2.5
Brewed with flaked oats and oat malt for a silky smooth mouth feel and a hint of nutty oatmeal flavor. A blend of roasted malts and crystal mats provide the chocolate, coffee and caramel flavors.
Udderly Black- Milk Stout- 5.3% ABV, 20 IBU- 16 oz $6, 5 oz $2.5
A blend of roasted malts give the beer its rich chocolate and coffee character. The body and sweetness are provided by crystal malts and the addition of Lactose (Milk Sugar) which is not fermented by beer yeast.

Gold- Lambic Inspired Sour Golden Ale- 7.5% ABV- 11 oz $7, 5 oz $3.5
Gold is inspired by the traditional Lambics of Belgium. Brewed with wheat and flaked oats for a light malt character but still a bit of body. The beer was then aged for over a year in an oak Foeder with our custom blend of wild yeast and bacteria. The result is a complex beer with a pleasant sourness, notes of citrus, tropical, and stone fruits, and a mild, earthy funk. FOBAB 2020 Silver Medal Winner
Barrel Aged Cherry Gold- Lambic Inspired Sour Golden Ale- 7.5% ABV- 11 oz $8.5, 5 oz $4.5
This is our Cherry Gold with additional aging in Cabernet Sauvignon barrels. This beer was aged for a full year in one of our oak Foeders, after Foeder aging it was aged with real, tart Cherry juice in a fermenter, allowing the simple sugars to ferment. The beer was then aged for an additional year in Cabernet Sauvignon barrels. All of this combines to create an incredibly complex beer that is sour up front with notes of pie cherry, red wine, oak, stone fruits and a mild funk.
Pinot Noir Barrel Aged Blanc- Foeder/Barrel Aged Brett Berliner Weisse- 4.5% ABV- 11 oz $7, 5 oz $3.5
Our take on the classic, German style, sour, wheat beer is co-fermented with Lactobacillus bacteria and a blend of fruit forward Brettanomyces and then aged in an Oak Foeder. The result is a more complex version of the style with a smooth but noticeable sourness and notes of tropical and stone fruit, citrus, oak, and a mild funk. After Foeder aging, this version has an additional aging in Pinot Noir barrels with a bit of Pinot Noir juice added. Theadditional aging adds complexity with a vinous character and notes of oak, dark fruits, and a more pronounced “funk”.
