Quiet Giant- Chocolate/Vanilla/Cinnamon- Bourbon Barrel Aged Imperial Stout- 14% ABV- 6 oz $5
Brewed once a year to celebrate our Anniversary (the Saturday after Memorial Day), this is the biggest beer we make. The beer is barrel aged for a minimum of a year and we do several variations each year. This version was aged for a full year in Bourbon barrels, real Cocoa nibs, Vanilla beans, and Cinnamon sticks were added after aging. (2020 release)
Maple Syrup Barrel Aged Double Dee’s – Imperial Porter- 10% ABV- 12 oz $8, 5 oz $4
This version was aged for a year in Ex-Bourbon, Maple Syrup barrels for a nice maple character and notes of Bourbon, vanilla and oak. All of the maple comes from the barrels, there is no “maple flavoring”, extract, or unfermented syrup. This keeps the maple character more subtle and natural and prevents the beer from becoming sweet.
Irish Whiskey Barrel Aged Udder Madness- Imperial Milk Stout- 10.5% ABV- 12 oz $8, 5 oz $4
This is a scaled up version of Udderly Black. A blend of roasted malts gives the beer its chocolate and coffee character. The body and sweetness are provided by crystal malts and the addition of Lactose (Milk Sugar) which is not fermented by beer yeast. This version was aged for a year in Irish Whiskey barrels to add complexity and a smooth Whiskey character with notes of vanilla, oak, dark fruits, and spice.
Crank It Hop- Citra/El Dorado Hopped IPA- 6% ABV, 50 IBU- 16 oz $6, 5 oz $2.5
Each batch of Crank It Hop features different hops. This batch features one of our favorite hop combinations. Citra is a classic American IPA hop with bright Citrus and notes of grapefruit, lime, and tropical fruits. El Dorado is a newer American hop with bright tropical fruits and notes of watermelon, pear, and stone fruit.
Crank It Hype- New England Style IPA- 7% ABV, 25 IBU- 16 oz $7, 5 oz $3
Fuller in body and less bitter than a traditional IPA but our version stops short of being sweet like a lot of examples, keeping the beer more drinkable. 4+ pounds per barrel of hops are used, all of which are added in the whirlpool and as dry hops. This extracts less bitterness from the hops, and gives the beer a “juicy” hop character and the trademark “hazy” appearance.
Crank It Dank- West Coast Style IPA- 7% ABV, 60 IBU– 16 oz $6, 5 oz $2.5
West Coast IPAs are typically brewed to showcase hops with very little malt character. Our version is brewed with a very simple malt bill of Pale and Pilsner malt and a bit of sugar to dry the beer out. It is aggressively hopped with Ekuanot, Citra and Mosaic. These are newer hop varieties that are bred to have a strong, pungent aroma and flavor often described as “dank”.
Prediction?…Pain!- Imperial IPA- 8.5% ABV, 85 IBU- 12 oz $7, 5 oz $3
More balanced than a lot of IIPAs with a focus more on flavor and aroma hops than bitterness. Hopped with Ekuanot, Simcoe and Mosaic. These hops create a complex blend of flavors including citrus, tropical fruit, berry, passion fruit, peach, and pine.
Imperial Pain!- Imperial Imperial IPA- 12% ABV, 100+ IBU- 6 oz $4
This version of Prediction?…Pain! Uses the same blend of malt and hops as regular Pain but almost double the amount. It is intense and strong but is surprisingly smooth and dry for its strength.
Brixie’s Lager- Premium Lager- 5.3% ABV, 13 IBU- 16 oz $5, 5 oz $2
Drink in the tradition of this bright golden lager brewed to honor the history of Brixie’s, the former home of our Brookfield location. Brewed with Pilsner malt, Special Aromatic malt, and a combination of traditional Saaz and El Dorado a newer American hop, for a complex yet, refreshing flavor and slightly dry finish.
Czech Your Head- Pilsner- 5.2% ABV, 30 IBU- 16 oz $5, 5 oz $2
Our take on a traditional Czech Pilsner is extremely well balanced with a clean, bready malt character from Pilsner and a bit of Vienna malt and just enough hop presence to give the beer a crisp, dry finish. Czech Saaz hops provide the floral, slightly spicy hop flavor and aroma.
Hefe’nother- German Hefeweizen- 5.5%, 9 IBU– 16 oz $5, 5 oz $2
A light and refreshing beer brewed with Pilsner and wheat malts. The traditional German Weizen yeast provides the spicy and fruity character often described as banana and clove.
Sugar Shack- Maple Brown Ale- 7% ABV, 17 IBU- 16 oz $6, 5 oz $2.5
Brewed with real Vermont maple syrup for a nice maple note that balances well with the brown ale base beer. Munich, Crystal, and Oat malts provide some sweetness and a toasty flavor to support the maple, we also add a bit of lactose and vanilla to accentuate the maple, no maple “flavoring” or extract was used.
Intoxicator- Doppelbock- 7.8% ABV, 15 IBU- 16 oz $6, 5 oz $2.5
A stronger version of a traditional German Bock. Amber in color from generous amounts of light and dark Munich malts which also provide a rich toasty malt character. A small amount of CaraMunich malt provides a bit of sweetness and a hint of toffee. This beer was traditionally brewed by German Monks to sustain them during the Lenten fast.

Ruby- Foeder Aged Flanders Style Red Ale- 8% ABV- 11 oz $7, 5 oz $3.5
Brewed with Munich and CaraMunich malts for some sweetness and a bready, toffee malt character. The beer was then aged for over a year in an oak Foeder with our custom blend of wild yeast and bacteria for a complex blend of flavors including pie cherry, stone fruit, berries, oak and an earthy funk at the end.
Cherry Ruby- Foeder Aged Flanders Style Red Ale- 8% ABV- 11 oz $8, 5 oz $4
This version has an additional aging with real, tart Cherry juice in a fermenter, allowing the yeast and bacteria to ferment the simple sugars adding complexity and preventing the beer from becoming sweet.
Blanc- Foeder Aged Brett Berliner Weisse- 4.5% ABV- 11 oz $6, 5 oz $3
Our take on the classic, German style, sour, wheat beer is co-fermented with Lactobacillus bacteria and a blend of fruit forward Brettanomyces and then aged in an Oak Foeder. The result is a more complex version of the style with a smooth but noticeable sourness and notes of tropical and stone fruit, citrus, oak, and a mild funk. Raspberry and Woodruff syrups available.
Watermelon Blanc- Foeder Aged Brett Berliner Weisse- 4.5% ABV- 11 oz $7, 5 oz $3.5
This version has an additional aging with real Watermelon juice in a fermenter, allowing the yeast and bacteria to ferment the simple sugars adding complexity and preventing the beer from becoming sweet.
